Getting Over My Fear of Fish

First off, hi Mom!

The main reason for this blog is so I can share pictures and details about my life with my family, who I do not get to see nearly as much as I would like. It's also about food...because, why not? As a newlywed I love making dinners that my husband loves, and I am learning to make easy, prep-ahead dinners that fit into my busy schedule and keep us from having to spend hours at the gym!

This recipe is what I used to make fish on my own for the first time. Safeway had this great deal on a bag of frozen tilapia and I had been thinking we should eat more seafood, so I bought it, having no idea what to do with it. I then proceeded to spend way too much time looking for recipes before I turned the bag over and found a yummy-sounding recipe on the back of the bag. Here's my interpretation, a mix of all the recipes I read:

Pecan-Crusted Tilapia

2 thawed tilapia fillets
1 tbsp. butter or margarine
1/2 tbsp. honey
1 tbsp. dijon mustard
1/8 cup bread crumbs
1/4 cup finely chopped pecans (I have since made this using walnuts and almonds, all were delicious)
1 tsp. finely chopped parsley

Preheat oven to 450 degrees. Place tilapia is a sprayed baking dish, sprinkle with salt and pepper. In a small bowl, melt butter and honey in microwave. Stir in mustard, brush mixture on fish. Combine bread crumbs, pecans, and parsley and dredge fish in mixture. Bake for 8-10 minutes.

I served this with roasted carrots, parsnips, and potatoes that I tossed in olive oil and sprinkled with salt and pepper. I put them in the oven 15 minutes before popping in the fish. So quick and yummy!
